Animal Based Salmon Croquettes

Preparation time: 5 minutes  •  Cooking time: 10 minutes • Makes 2 servings

Ingredients:

100 g egg whites (about 3-4 egg whites)

40 g Alaska Wild Smoked Salmon

50 g pork cracklings or fried beef trimmings

Salt

2 tbsp lard or tallow for deep frying


Method:

Blend all ingredients – except for the lard – until homogenous.

The amount of added salt will depend on how salty the salmon is and whether the greaves are salted or not.

Heat up the lard in a small and deep iron pan. With the help of two tablespoons form croquettes. Fry both sides until nicely golden.

Serve warm or cold.


Each serving of the keto-carnivore salmon croquettes contains the following macronutrients:

  • Calories: 350.7 kcal

  • Protein: 29.5 g

  • Fat: 25.6 g

  • Carbohydrates: 0.56 g


To make these high protein croquettes ketogenic, you need to serve them with some extra fat, such as a dip made with bone marrow and egg yolks, for example. This way it is an excellent choice for those following a ketogenic carnivore diet, with a focus on high fat and protein, and minimal carbs. ​​
