Would you like to enjoy some delicious PKD crackers? This recipe is easy to make and even family members who don't follow PKD might like it. Enjoy with liver pâté, lard, fatty smoked sausage or bacon slices.
Makes 20-22 crackers
Ingredients :
70 g cooked meat - pork, beef or chicken
50 g ground pork rinds
25 g pork greaves
3 eggs
0.5 tsp salt
Optionally some chopped fresh thyme or rosemary
Method:
Blend all ingredients until smooth and homogenous.
Wrap it in a plastic foil and let rest in the fridge for minimum 30 minutes.
Take the dough from the fridge, unwrap it and roll it out into a square about 5 mm thick between the plastic on one side and a parchment paper on the other side.
Take off the plastic and cut it into squares with a sharp knife.
Sprinkle with salt and place it on a baking tray together with the parchment paper that was already under the dough.
Bake for about 10-15 minutes until golden and crispy. Separate the squares from each other and enjoy.
