Ingredients for about 30 cookies:
- 250 g marzipan (organic, 50% almonds-50% honey)
- 150 g ground almonds
- 150 g ground hazelnuts
- 50 g chopped walnuts
- 2-3 chopped dates
- 50 g chestnut flour
- 2 tablespoons apricot jam (organic, preferably without added sugar)
- organic orange and lemon zest
- 1 egg
- 1 tablespoon cognac or rum
- salt
- 1 teaspoon bicarbonate of soda
- 2 tablespoons mixed Christmas spices: cinnamon, cloves, nutmeg, ginger, anise, cardamom, coriander,
- 150-200 g dark chocolate (min 70% cocoa content)
Preparation:
- preheat oven to 140 C
- mix all the ingredients (except the chocolate) to a dough
- form small balls and place them on a cookie sheet lined with parchment paper
- bake for about 20 minutes
- let cool and ice with the melted chocolate
