Eggs are not only delicious but also incredibly versatile. I enjoy them paired with bacon, ham, sausages, or bone marrow. To maintain a good level of ketosis, it's important to add some fat to your eggs. For these fluffy keto-carnivore egg rolls, I included bone marrow and smoked slab to enhance both the flavor and the fat content.
Ingredients - makes 2 servings
4 egg yolks
4 egg whites
40 g bone marrow
Salt
4 slices Parma ham
4 slices of Mangalica smoked slab or other high quality fatty bacon
Lard for frying
Method
Blend the egg yolks with the marrow.
Whisk the egg whites with a pinch of salt until soft peaks form.
Lay two slices of bacon on top of two slices of ham and roll them up. Repeat this with the remaining bacon and ham.
Heat some lard in a small pan.
Pour in half of the egg yolk mixture and fry briefly until it solidifies.
Place one ham roll on one side of the pan and roll it up in the yolk mixture.
Leave it in the pan and spoon in half of the whipped egg whites. Fry briefly and roll up.
Repeat the process with the remaining ingredients.
Serve warm.
