Paleolithic-Ketogenic DIet (PKD), Ketogenic Metabolic Therapies
I made a 3-course Keto Thanksgiving menu plan from my E-books for my friends who follow the Palaeolithic Ketogenic Diet.
The main ingredients are meat and fat, but I also included a side dish and a dessert. These can simply be left out by those who cannot or don't want to eat plants.
The whole menu can be consumed as OMAD, it has about 55 G protein, 100 g fat and 16 g carbohydrates per portion.

The Starter - Breaded Bone Marrow
PKD, Keto, Carnivore, High-fat, No-carb, Plant-free
I love bone marrow and I love this "breaded" version of it too. This meal is mostly fat, it makes a great starter before the more protein-rich main course.
Ingredients
makes 4 servings
8 small round marrow bones (15 g per piece)
30 g pork greaves
1 egg
Salt
Preparation
Blend the egg with the pork greaves and some salt. Push the marrow from the bones and dip into the the egg mixture.
Heat up 2 tbsp lard in a small deep pan and deep fry the marrows for about 2-3 minutes both sides, until golden.
Makes a great side dish to lean meat. One portion contains about 30 g fat and 4 g protein.
The Main Course - Carelian Hot Pot
PKD, Keto, Carnivore, High-fat, No-carb, Plant-free
This is a traditional, old fashioned dish from Finland. I modified it by leaving out the onions and the root vegetables and adding marrow bones for more taste and nutritional value. It's a delicious mixture of beef, lamb and pork.
Ingredients
Makes about 10 servings
500 g beef stew meat
500 g pork stew meat
500 g lamb stew meat
4 tbsp lard
4-5 marrow bones
200-300 ml bone broth
Salt
Pepper (optional)
1-2 sprig rosemary (optional)
Preparation
Preheat the oven to 130 °C
Chop the meat into 3x3 cm pieces.
Melt the lard and pour into an oven dish. Add the mixed meat pieces, the bones and the spices.
Pour over as much broth that the meat is just covered.
Roast in the oven uncovered for about 5 hours, until the meat is tender and the upper layer is nicely coloured. .
You can also pre-fry the meat before roasting, but it is not necessary.
The Side Dish - Braised Red Cabbage
PKD
This is, of course, optional. Red cabbage is a nice winter dish for those who are healthy or recovered and like to eat some vegetables from time to time.
Ingredients
Makes 6 servings
600 g red cabbage, cored and thinly sliced
3-4 tbsp lard
1-2 dl water
Salt
Pepper (optional)
1 small sour apple, thinly sliced (optional)
1 tsp honey
Preparation
Melt the lard in a large pan.
Add the cabbage and the apple and fry on high heat for a few minutes. Season with salt and pepper.
Add the water, cover, reduce the heat to low-medium and simmer the cabbage for about 2 hours.
Serve as a side dish with any meat.
The Dessert - Layered Dessert Cream
PKD, Keto, High-fat
This delicious dessert is made with simple ingredients: eggs, berries and honey. On normal days we don't eat desserts but on certain occasions it's ok to make exceptions. This is by no means a must.
Ingredients
Makes 4 portions
4 egg whites
Small pinch of salt
8 egg yolks
100 g strawberries or any other berries
2 tsp honey
Preparation
Whip the egg whites with the salt until soft peaks. Add the berries and whip further until firm.
Whip the egg yolks with the honey until light and foamy.
Divide the two creams between four dessert glasses and serve immediately.
