Layered Berry Cake For Special Occasions

Is it possible to make a delicious cake that is low in carbohydrates, high in fat and doesn't contain grains, dairy, nuts and any plant oils? OH YES, it is!

When we have a disease to heal or we follow an animal-based diet for any other reason, we simply don't eat cakes and that's perfectly fine. But when we are healthy, there might be some occasions when we would like to make an exception and prepare something nice and delicious using, of course, only paleo-keto ingredients. I created this recipe for special celebrations, such as birthdays or Mother's day, for example.



Preparation time 40 minutes; Makes 8 servings


Ingredients

1/2 portion home-made berry jam

1 portion paelo-keto sponge cake, or any PKD compatible sponge recipe

2 tbsp lard


Method

Prepare the berry jam: put 500 g mixed frozen berries into a pot, bring them to boil, reduce the heat and simmer for about 30 minutes, until thick. Push through a colander, spoon into a jar and let it cool. Use half a portion for this cake.



Prepare the sponge cake with 6 eggs. My recipe you'll find in my Christmas Recipe collection, but you can also use any other PKD sponge cake recipe.



Cut the sponge into 6 equal parts. Melt the lard and spoon over the sponge cake pieces. Spread the jam over the layers and place them on top of one another. Serve and enjoy!
