Ingredients for 2 servings

  • 4 large egg yolks

  • 8 g pure raw honey

  • 8 g unflavored gelatin

  • 2 tbsp cold water

  • Optional: 1/2 tsp vanilla extract or ground vanilla and/ or 1 tsp lemon zest



Method

  1. In a small casserole, combine the gelatin and cold water. Let it bloom for 5 minutes, then gently heat over low heat until fully melted. Set aside to cool slightly.

  2. In a medium bowl, whisk the egg yolks and honey together until pale, frothy, and slightly thickened.

  3. Gradually whisk in the cooled gelatin mixture until fully incorporated. If using, add vanilla or lemon zest at this stage.

  4. Divide the mixture evenly between two ramekins or small dessert cups. Refrigerate for at least 1 hour to set.

  5. Serve chilled, optionally garnished with a sprinkle of lemon zest or some fresh berries for extra flair.
