This keto, carnivore Swiss Roll is crafted using the key ingredients of the Paleolithic Ketogenic Diet (PKD): red meat, beef liver, and bone marrow.
I’ve topped it with pork crackling crumbs for added texture, though you can easily substitute with beef crackling, bacon crumbs, or skip the topping altogether. If you tolerate eggs, feel free to mix one into the meat to help bind it, though the recipe will still hold together just fine without it.

Ingredients
makes 3 servings
400 g fatty ground beef 25-30% fat
120 g organic grass fed beef liver
About 40 g bone marrow
40 g pork cracklings or bacon cubes
Salt to taste
Optionally black pepper or any herbs of your preference
Method
Flatten the ground beef on a parchment paper and form a rectangle. Sprinkle with salt.
Blend the liver with the marrow and spoon the mixture over the meat. Salt again.
With the help of the parchment paper, roll it up.
Top with the crackling crumbs.
Fry in a preheated air fryer or oven at 190 °C for 20-25 minutes until golden. Let it rest for 10 minutes before slicing and serving.
