This honey-sweetened PKD dessert is very satiating, so be aware that a small portion will be enough;) The fat to protein ratio is 2:1.
Serves 2-3
Ingredients:
1 whole egg
50 g pork greaves (cracklings)
2 egg whites
2 egg yolks
1-2 tsp honey
2-3 tbsp lard for frying
Method:
Mix the whole egg and the greaves with a hand mixer until smooth and let stand for 10 minutes.
Whisk the egg whites with a pinch of salt until stiff.
Fold the egg whites in the greaves mix.
Heat the lard in a small pan. Take small portions of the dough with a teaspoon and fry both sides in the lard until golden.
Serve with PKD honey sauce:
whip the egg yolks with the honey with a hand mixer until light and foamy.
