This recipe is for people who like to create nice things in the kitchen for special occasions, such as Christmas or birthday parties.
The main ingredients are gound beef, eggs, bone marrow and fatty bacon. We could, of course simply fry these ingredients separately and eat tham right away, but isn't it cool to make something nice also for the eyes sometimes? To create a fancy looking healthy dish, that is so appetising that even guests who don't follow PKD/keto/carnivore diet would eat it? It's amazing how many variations we can make from a few simple ingredients to create nutritious dishes.
Ingredients - makes 4 servings
"Pastry"
400 g ground beef (30% fat)
20 g pork rinds
2 egg whites
Salt
2 tsp lard for frying
Filling
3 large eggs
30 g bone marrow
Salt
On top
40 g very fatty bacon, preferably Mangalica slab
Method
Boil the eggs for 8 minutes and let them cool completely in cold water.
Fry the bone marrow for 2-3 minutes and let it cool.
Ground the pork rinds and mix it with the fround beef, the egg whites and the salt. Let it stand for 30 minutes.
Meanwhile prepare the filling. Peel the eggs and blend with the bone marrow and the salt. Let it set in the fridge for 15 minutes.
Dice the bacon and fry until crispy.
Put the meat mix between two parhment paper sheets and roll out until fairly thin.
Cut into rectangular shapes. Heat the lard in an iron pan and fry the both sides of the meat pieces until golden and the edges crispy.
Put the filling into a piping bag with a star tip and pipe 6 swirls on each meat slice. Place one meat on top of another, so you'll get 4 Millefeuilles.
Top with the bacon and its rendered fat and serve.
