This is a delicious one-pot meal with an ideal fat to protein ratio and great nutritional value.
Ingredients (serves 4)
300 g ground lamb (1/3 fat)
70 g smoked Mangalica slab
200 g beef or lamb liver
200 g Sauerkraut (optional)
3 eggs
30 bone marrow
1/2 tsp salt
1 tbsp crackling crumbs or bacon cubes on the top
Method
Cut the slab into small cubes and fry them shortly in a pan. Add the lamb and fry it for about 3-5 minutes. Add salt and optionally some black pepper to taste.
Blend the raw liver, add it to the meat and fry for one more minute.
If you use Sauerkraut, drain it and place half of it in an oven dish.
Spoon the meat-liver mix on it and top with the other half of the cabbage.
Blend the eggs with the marrow. Salt to taste.
Pour the egg mixture over the meat.
Sprinkle the crackling crumbs or bacon cubes on top.
Bake in preheated oven at 190 °C for about 20 minutes, until golden.
