I’ve reimagined the traditional recipe using just three core ingredients to create a dairy-free, high-fat, carnivore version. While it differs in taste from the original, it visually echoes the classic dish and delivers a delicious, nutrient-dense meal. This recipe is high in fat, moderate in protein, and nearly carbohydrate-free.

Ingredients (Serves 1)
4 large eggs
25 g Mangalica bacon (or other very high-fat bacon or smoked slab)
40 g pork or beef cracklings
1 tsp fresh lemon juice
Salt, to taste

Method
Prepare the eggs: Separate two eggs, reserving the yolks and setting the whites aside. Keep the remaining two eggs whole.
Make the "cottage cheese": Using the two egg whites, prepare a carnivore-friendly "cottage cheese" substitute according to this recipe. Set aside.
Blend the batter: In a blender or food processor, combine the two reserved yolks, the two whole eggs, and the cracklings. Blend until smooth. Add salt to taste.
Cook the bacon: Dice the Mangalica bacon into small pieces. Fry in a skillet over medium heat until crispy. Remove the bacon bits with a slotted spoon, leaving the rendered fat in the pan. Set the crispy bacon aside.
Fry the "noodles": Pour the egg-crackling mixture into the hot bacon fat. Cook as one thicker or two thinner "pancakes," flipping once to cook both sides until golden and set. Transfer to a cutting board and slice into strips to resemble noodles.
